Cherry and amaretto cake

In hot summer days nobody wants to spend to much time in the kitchen. This appetizing and flavorous summer cake is amazing! Your time table will look like this: 10 minutes in your kitchen, 45 minutes in your {garden, pool, craftroom, anywhere}, then 10 minutes in your kitchen, and another 45 minutes out… and it seems to me that your kids need no more than 10 minutes to finish this cake.



400 gr. cherries, pitted
160 gr. whole grain flour
120 gr. sugar
130 gr. unsalted butter, room tepm.
2 eggs
1 tsp baking powder
3 tbsp amaretto liqueur

Beat the butter with the sugar, add eggs one by one and mix it well. Add amaretto liqueur. Mix the flour and baking powder then add the cherries. Combine the two mixtures, stir and place in refrigerator for 45 minutes. {yes, now you can leave your kitchen!}

Preheat the oven to 210C. Put the dough to the greased and sprinkled with flour cake pan and bake for 5 minutes. Reduce the temperature to 180C and bake for another 45 minutes. Pull the cake from pan, put it on the wire rack and cool.Before serving, sprinkle with powdered sugar and garnish with cherries.
