Cherry Tart

Summer is almost here, and it’s a great reason to use fresh berries in your kitchen crafts! Let’s begin from simple and tasty tart with fresh cherry and sour cream.


175 gr. whole grain flour
50 gr. sugar
100 gr. unsalted butter
zest and juice of 1 lemon
300 ml of cream
500 gr. cherries, pitted
3-4 tbsp cherry jam

Mix the flour and sugar in a bowl. Keep 1 tablespoon of lemon juice for filling and melt the butter with the remaining lemon juice and zest. Add the melted butter to the mixture of flour and sugar and mix all with a wooden spoon making hard dough. Put the dough in the Tart tin, covering the bottom and bumpers. Prick dough with a fork shape and chill the dough in a refrigerator for 30 minutes.

Preheat the oven to 200C. Cover the tart shell with baking paper and fill it with dried beans or rice. Bake for 25-30 minutes. Remove beans, put sour cream and bake for another 10 minutes. If the cream is too browned, cover it with aluminium foil. Remove the tart from the oven and chill. Two hours before serving decorate the tart shell with cherries. Heat the cherry jam with 1 tablespoon of lemon juice and rub the berries using cooking brush.
