Halloween soup

Right about now my American friends are getting ready for Halloween. We do not celebrate Halloween here in Israel, but one Israeli thing is great for this non-Israeli festival. This is traditional and popular Israeli orange soup!

It may sound like this soup is made of oranges, but it’s not so. It’s made of orange vegetables such as carrots, pumpkins, and sweet potatoes. These orange vegetables may be used all together or separately. There are also other ingredients that may be used for this soup such as red lentils, tomatoes, red bell peppers, onions, potatoes, chicken broth, white or red wine, milk, cream or sour cream and many others!

I have a one-year-old boy and I need to adjust all my cooking to his taste while making sure it is good enough for other family members. That’s why our family recipe of orange soup is really simple. I just peel and chop carrots, pumpkin and sweet potatoes. Then, I put them in a steamer for 40 minutes.

After veggies are soft, I puree them in a blender, add salt, vegetable oil, and hot water if the soup is too thick.

Then, I serve it with chopped greens and sour cream. It also may be served with toasted bread, crackers,  or croutons.

What’s great about this soup is that all my family love it: my hubby, my baby, and my teenage daughter.
